Octopus in Red Wine

   Ingredients
1 kg baby octopus
1/3 cup extra virgin Olive Oil
1 large onion, finely chopped
2 bay leaves
2 tablespoons dry red wine
2 tablespoons brown vinegar
1/2 teaspoon cracked black pepper
1/2 teaspoon dried oregano leaves

Place cleaned octopus, extra virgin Olive Oil, onion,and bay leaves in heavy baed pan. Cook uncovered on medium heat for 20 minutes or until almost all liquid is absorbed stirring occassionally.

Add remaining ingredients to pan. Bring to boil, reduce heat and simmer covered for 15 minutes or until octupus is tender.

Seve warm or cold with Greek salad.
